  • 6 lbs. sweet potatoes, cut into 1/2 inch cubes

  • 4 fl. oz. lime juice, freshly squeezed

  • 4 1/2 oz. green onions, bias cut

  • 12 oz. celery, 1/8 inch diced

  • 1 lb. mayonnaise

  • 1 oz. cilantro, chopped

  • 1 oz. chipotle powder

  • salt & pepper to taste


  • Preheat oven to 350 degrees F.
  • Toss cubed sweet potatoes in olive oil and roast until tender, about 18-20 minutes. Let potatoes cool.
  • Mix in mayonnaise, lime juice and chipotle powder.
  • Add in the rest of the ingredients, then cover and place in the refrigerator. For the best flavor, leave in the refrigerator overnight.
