6 lbs. sweet potatoes, cut into 1/2 inch cubes
4 fl. oz. lime juice, freshly squeezed
4 1/2 oz. green onions, bias cut
12 oz. celery, 1/8 inch diced
1 lb. mayonnaise
1 oz. cilantro, chopped
1 oz. chipotle powder
salt & pepper to taste
- Preheat oven to 350 degrees F.
- Toss cubed sweet potatoes in olive oil and roast until tender, about 18-20 minutes. Let potatoes cool.
- Mix in mayonnaise, lime juice and chipotle powder.
- Add in the rest of the ingredients, then cover and place in the refrigerator. For the best flavor, leave in the refrigerator overnight.
